Simple Chicken and Rice --Another Recipe

"I made this up from things I had on hand-and by reading other's recipes-no cream soups in this--use kosher canned chicken broth if available since it tastes much better ( her in west palm beach, it is available at most supermarkets)--I also use "parboiled rice"-like uncle bens."

  • Preheat oven to 350 degrees F.
  • Use 1 Tb butter to grease 9x9 pyrex square pan.
  • Place rice ( rinsed till clear), chicken broth, water, onion soup mix and 2 Tb butter into pan.
  • Place chicken breasts, which have been cut up ( as you wish) into the pan.
  • Sprinkle pepper over the chicken.
  • Cover the pan tightly wth foil and place into oven.
  • Bake for 45 minutes tightly covered then bake an additional 15 minutes uncovered.

  1. *Made for Australia/NZ Swap #48* (My initial review has never posted !) Purposely did not assign stars since I think there is an error in this recipe. I followed all directions, including Uncle Ben's parboiled rice -- which I think MAY be part of the problem. After 1 hour of baking, I had some tasty chicken slices, some 1/2 done rice, and a casserole full of liquid. The proportions were what I would expect. but either temp was not high enough or basmati rice may have been more absorbent. So sorry this did not work, petlover.

Hello fellow cooks-I am on OBGYN doctor and I am new to this website. . I love RecipeZaar since there are so many, easy, delicious, tested recipes.
