Simple Crock Pot Chicken and Potatoes

"This is an extremely easy recipe for perfect crock pot chicken and potatoes. It smells wonderful and it's great to come home to a ready meal that only took 10 minutes to prepare. The chicken falls apart and the potatoes practically melt in your mouth! The potatoes cook in the juices from the chicken, so there's no need to season. They have great flavor. Add a vegetable as a side and you're good to go!"

  • Season both sides of the chicken to taste.
  • Put sliced potatoes in the bottom of the crock pot. Put the chicken on top and cover.
  • Cook on high for 4-5 hours or low for 7-8 hours.

  1. I used a mixture of chicken legs and breasts and I did sprinkle some spices on the potatoes as well. I think that adding a bit of lemon juice and minced garlic to this would be divine so I plan to try that next time. I decided to put the chicken under the broiler for a few minutes before I served it, just to add that lovely brown colour and crisp the skin a bit. Good recipe AshleyNeicole, thank you for sharing it. Made for PAC 2011.

  3. I made this and it's GREAT!!! I did change some things however - I used Lawry's season salt, Jamaican Jerk seasoning, & Cajun seasoning - I used this combo on the potatoes and both sides of the chicken (large leg quarters). I also put 4T of butter on top of the chicken & let it melt down as it cooked. Super good!!!! This one is going in my recipe box!!!!
     
  4. This is very easy to make. Just throw a whole chicken in the crockpot & dinner will be ready. I liked the seasonings in the recipe. They added a traditional roasted chicken flavor. I also added celery, carrots, & onions to the pot. Made for Spring '09 Pick A Chef.
     
  5. Tried this yesterday with a change and a few additions: I used parsley instead of oregano, added onion powder to the chicken, salted the potatoes and bot the chicken (kosher chicken does *not* need mor salt), and sliced some garlic and added it on top of the potatoes. Rave reviews from the fam. Unfortunately, it was not quite enough for 5 hungry adults, even with the salad.

  1. I used 2 bone-in chicken breast halves in place of a whole chicken and cooked in my 1 1/2 qt. crock. This was wonderful to come home to. The chicken was tender and juicy and the potatoes were perfectly seasoned. I used the leftover chicken breast in Recipe #324833 . I love these recipes that give me 2 delicious meals! I love to eat, and I love to cook so here I am! As a mother of two that works full-time and attends college full-time, I like to make dishes that are cheap and use easy ingredients. Quick (most of the time) and simple is my motto. My recipes will normally include ingredients that you find on shelves in your local grocery stores. I like using canned sauces or vegetables and spices for my foods and adding my own zing to make the dish my own. I guess I want chefs to understand that you don't have to spend an arm and a leg on fresh ingredients to make a great dish!
