  • Bring broth and water to boil.
  • Add barley, reduce heat and cover. Note, the lid will rattle and the the barley will make starch bubbles, this is ok.
  • Simmer for 45 minutes, until barley is visibly moist but there is no liquid at the bottom of the pan. Turn off heat, cover for 1-2 minutes.
  • Remove lid and stir in olive oil , cover again for another minute.
  • Add cumin and garlic or Mrs Dash. a pinch of salt and pepper to taste is good. Stir thoroughly.
