Simple Elegant Cornbread Muffins

"My neighbor wanted me to make cornbread for them so I played with several different recipes and created this one. So far everyone loves this one. The Cayene Pepper and Jalapenos are optional if you prefer a traditional flavor without the heat. Tastes great either way!"

  • Preheat oven to 450 degrees.
  • Add 1 tablespoon Cider Vinegar to 1 cup of skim milk, set aside.
  • Place dry ingredients into food processor in order and grind until fine powder, then pour into medium mixing bowl.
  • Add Eggs to Skim Milk, stir briskly, then add finely diced Jalapeno Peppers.
  • Pour Skim Milk mixture to dry ingredients, mix with fork until evenly mixed, don't worry about small clumps.
  • Put 1 heaping tablespoon of mixture into greased muffin tray about 3/4 full.
  • Bake until golden brown about 12 - 14 minutes for muffins or 20 minutes for baking pan.
