- 1⁄2 cup rolled oats
- 1 tablespoon sugar
- 1 cup yellow cornmeal
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- 1⁄2 teaspoon baking soda
- 1⁄8 teaspoon cayenne pepper
- 2 eggs
- 1 cup skim milk
- 1 tablespoon cider vinegar
- 2 jalapeno peppers
directions
- Preheat oven to 450 degrees.
- Add 1 tablespoon Cider Vinegar to 1 cup of skim milk, set aside.
- Place dry ingredients into food processor in order and grind until fine powder, then pour into medium mixing bowl.
- Add Eggs to Skim Milk, stir briskly, then add finely diced Jalapeno Peppers.
- Pour Skim Milk mixture to dry ingredients, mix with fork until evenly mixed, don't worry about small clumps.
- Put 1 heaping tablespoon of mixture into greased muffin tray about 3/4 full.
- Bake until golden brown about 12 - 14 minutes for muffins or 20 minutes for baking pan.
