Simple Garlic & Feta Smashed Potatoes

- 4 -5 large potatoes, skin on, chopped
- 3 -4 garlic cloves, peeled
- 3⁄4 cup feta cheese, finely crumbled
- 1⁄2 cup mayonnaise
- 1⁄8 cup milk
- 2 tablespoons butter
- salt and pepper
directions
- Boil the potatoes and garlic cloves together until potatoes are tender.
- Drain, retaining potatoes and garlic.
- Add mayo, milk and butter and "smash" the potato and garlic together with a hand masher. (I prefer the texture this way, but you can use a mixer if you prefer it that way.).
- When potatoes are the consistency that you like, add the feta cheese and mix well to distribute.
- Salt and pepper to taste.
- Enjoy.

I am 25, and am mostly vegetarian... I do eat eggs, dairy and seafood. I really, really love Indian food, so if you have a great Indian recipe that is easy to prepare, I am all ears!
I live with my boyfriend of 5 years, Thomas and our 2 cats: 2 year old Alfie and 3 month old Indica. We also have a family of wild birds living in a beautiful nest on top of one of our front porch pillars, and a constantly changing series of wild bird "friends" who like to come sample the cuisine that we put out for the "Family".
