  • 6 hard-boiled eggs
  • 3 tablespoons mayonnaise (I use light mayo on mine, don't care for salad dressing, use more mayo if needed)
  • 1 tablespoon mustard (I use regular yellow mustard)
  • 1 tablespoon relish
  • pepper (optional)
  • lettuce (optional)
  • 6 slices whole wheat bread (any type will do)

directions

  • Finely chop boiled eggs.
  • Mix in mayo 1 tablespoon at a time, so not to add too much.
  • Mix in mustard, relish and pepper.
  • Put egg salad mixture on bread (toasted is good as well), also good on rolls for finger foods.
  • Top sandwich with lettuce.
  • Enjoy!

  2. I usually don't care for relish in my egg salad. But, it wasn't bad in this. Just enough to add flavor but not to overpower it. I used Hellman's light mayo, French's yellow mustard and hot dog relish. Ate the egg salad plain, cause lets be honest, this body didn't need the additional carb loaded bread!

DD doesn't like anything in her egg salad but mayo, so I took the relish, mustard and mayo and ran them threw the food processor. So had no idea they were in there, but we still had the flavor. thank you for this yummy salad recipe.

Tweaks

  1. Add chopped cooked bacon and mix in with mayo/mustard/relish. Substitute spinach leaves for the lettuce. Voila! Muah!! Mega-Tasty blend of classic flavors!
     
  2. Add 1/4 tsp of salt
     
  3. I added paprika, powdered onion and butter. I substituted a pan fried egg for the egg salad, and I substituted a sliced croissant for the bread.
     
  4. Followed recipe with the addition of finely diced sweet pickles instead of the relish, some white pepper and 1 stalk of finely chopped celery. It was GREAT!!!!
