  • Rinse carrots under cold water and put in a medium saucepan. Cover with water and add salt. Bring to a boil. Reduce heat to medium-low, cover, and continue cooking for about 15 minutes, or until tender. Drain and set aside.
  • In a saute pan, melt butter over medium-low heat. Add honey and brown sugar and cook, stirring, until sugar is dissolved. Add the lemon juice and gently stir in carrots, coating well. Continue heating, gently stirring, until carrots are hot and glazed. Serve immediately garnished with freshly ground pepper or chopped parsley, if desired.

  1. My husband hates cooked carrots. He had seconds. Yum! I used baby carrots and cooked them as directed. I glazed them a little longer to fully caramelize the glaze.
     
  2. I used all ingredients with the exception of parsley and it turned out fantastic. I did cook these on the stove top for 30 - 40 minutes until the carrots were glazed then roasted them in the oven at 350 degrees for about 20 minutes for a more roasted taste with the glaze on it. I can't wait to make this again, great recipe!

  4. Just made this recipe after harvesting some fresh carrots. It is wonderful! I used almost 3 pounds of carrots. Still tasted wonderful!
     
  5. I followed this recipe to the letter and it was superb! A little bit sweet for my liking but 3 tbsp’s of sugar + the honey will do that. Will definitely make this again but next time less sugar
