  1. Brown ground beef in skillet. Drain off excess fat.
  2. Place ground beef, seasoned with salt and pepper if desired, in bottom of shallow baking dish.
  3. Cook 2 cup mashed potatoes according to box directions.
  4. Layer mashed potatoes over ground beef.
  5. Drain juice from diced tomatoes and cover mashed potatoes with diced tomatoes and onions.
  6. Sprinkle parmesan cheese and parsley over tomatoes and onions.
  7. Cook in a 350°F oven for 30 minutes.
