  • Mix condensed milk and lime juice with electric mixer until thickened.
  • Fold in the thawed Cool Whip.

  1. I will admit I have had slightly better key lime pies, but none so easy. I used a regular pie crust, bottled juice (with a little lemon juice added to make a full 1/2 cup) and recipe #22881 since I had no sweetened condensed milk on hand. It was very easy, and the taste is light and refreshing for a summer evening.
     
  2. I made this exactly as written, even using genuine Cool Whip. I used bottled lime juice, btw. It's nothing particularly fancy (looks decent enough), but this was quick and easy and tasted pretty darned good. I sliced it into 6 pieces and they lasted me for 6 nights; it kept well in the fridge. Thanks for a great recipe!
