  • In a medium bowl, combine mango*, peeled, pitted, and cut into 1/4-inch pieces (about 2 cups), onion, cilantro, jalapeno, and lime juice; season with salt. Serve with tortilla chips. Serves 4.
  • *Variations: Can add pineapple or organic peaches. Or substitute 2-3 organic tomatoes for mango.
