  1. mix sugar and salt.
  2. rinse scallops and place on a paper towel.
  3. heat butter on med- hi.
  4. season scallops with salt/sugar mixture.
  5. place seasoned side down and cook 3 minutes.
  6. season other side cook 3- 4 minutes.
  7. remove to plate and cover.
  8. pour wine in pan and reduce to a syrup.
  9. remove from heat and add 2tbs butter and parsley.
