  • Preheat oven to 350 degrees.
  • Cut tomatoes in half lengthwise. Squeeze or scoop out some pulp and seeds with a spoon. Turn upside down on paper towels to drain.
  • Place tomatoes cut side up in oven safe dish, and season with salt and pepper.
  • In a bowl, combine bread crumbs, parmesan, thyme, garlic and olive oil. Season with pepper.
  • Spoon crumb mixture over each tomato half and bake 10 minutes.

  2. We used fresh tomatoes that our neighbor had given us from her garden. This is a great side dish for something nice and different, and very easy to put together.

  4. This is easy and good. I added a little bit of dried basil, too. I think next time I might keep the tomato pulp and chop it in with the breadcrumb mixture, because although the breadcrumb mix is tasty, it is dry. I will hold on to this recipe and try it again when my garden starts to produce this year's tomato crop -- a dream for now, since the garden is under inches of snow and ice as I type this. Thanks, Recipe Reader, for a really good, classic recipe.
     
  5. The only addition I made was some minced onion. A great side dish to just about anything. Super simple and low in fat and calories!
