directions

  • Cook and drain pasta as directed.
  • While pasta is cooking, in a large pot, heat olive oil and saute chicken, garlic, salt, garlic powder, basil, and oregano until chicken is cooked.
  • Add sun-dried tomatoes and cook for two minutes.
  • Remove from heat and toss with pasta.
  • Serve with grated Parmesan cheese if desired.

Questions & Replies

  1. Could a person use a can of diced tomatoes in place of the sun-dried tomatoes? I never buy sun-dried. I bet mushrooms added in would be good.

  1. This is very tasty but also very dry. There is no liquid in this recipe. DH and I drizzled on some olive oil to wet it up. I wonder if you used sun-dried tomatoes in oil if that would solve the problem. Or you could keep some of the pasta water and use that. Over all the flavor is great. I used whole wheat pasta. Thanks for posting iewe.

  3. This was a great recipe! The chicken was well-flavored, and it didn't take too long to cook. We didn't have olive oil, tomatoes, or parmesan cheese, but this recipe was still delicious. The pasta was a bit dry, but I think the olive oil would've fixed that. Overall, this recipe was very quick, simple, and delicious. Thank you!
     
  4. Good idea but it needs some kind of sauce to tie the pasta and chicken together. Maybe a little chicken broth, red pepper flaks and white wine reduction or a white wine, cream and a little extra cheese. . .?
     
  5. Used this with leftover parmesan chicken. Since all I had were 12 oz bags of pasta, I decreased the oil to 3 tbsp and 1tsp of each seasoning..we love garlic so still used 3 cloves. The chicken I used still had some spaghetti sauce on it, so didn't use the sun dried tomatoes. Overall, the technique was super easy and super quick, so will definitely use again!

I am the mother of three, wife of one :) My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it." I am (slowly) trying to go thru all the recipes I have saved and add them to 'Zaar, but this will take some time.
