Simple Pesto Mayonnaise
"I first tried Pesto mayonnaise when we were at our granddaughter's ski meet. She had a sandwich with it on it--delicious. When I got home I got some fresh basil and made some Pesto so we could have the mayonnaise. Lots of work. One day I wanted some and didn't have fresh basil--guess what? This is a yummy substitute and you can have it anytime, and it is so easy and takes only a couple of minutes. I only make enough for a few sandwiches; then make again next time."

ingredients
- 59.14 ml mayonnaise
- 29.58 ml parmesan cheese
- 14.79 ml dry basil (more or less as desired but I like a fair amount)
- 0.25 ml garlic powder
directions
- Mix together.
- Put in small container and spread on sandwiches as desired.
- Enjoy!

This recipe saved me when I forgot to buy pesto at the store for a recipe I was making. The recipe didn't call for mayonnaise pesto, but I knew it would go well in it (it was sandwich-ey). This made the dish and saved the day! I'd bet that it tastes even better if allowed a day for the flavors to meld and the dried basil to soften. If I make it again, I'll use a bit more garlic, too. Thank you!
