  • Pre-heat oven to 325°F.
  • Remove giblets and neck from turkey and discard (unless you need them for something else).
  • Rinse turkey and pat dry with paper towels.
  • Place turkey on rack in roasting pan and brush with oil.
  • Mix together the dried parsley, rubbed sage, seasoned salt, garlic powder, ground black pepper, and nutmeg.
  • Place 1 T of seasoning mix, bay leaves, and onion wedges inside turkey.
  • Pat remaining seasoning mix over entire surface and inside skin.
  • Add chicken broth to roasting pan.
  • Cover turkey loosely with foil tent (shiny side in).
  • Roast one hour, then remove foil (reserve for later).
  • Roast another two to two and a half hours, basting occasionally with pan juices. If skin begins to get too brown, replace foil loosely over bird.
  • Let stand 20 minutes before carving.
