Simple Roasted Turkey

- 1 (12 -14 lb) whole turkey (thawed if frozen)
- 1 tablespoon vegetable oil
- 1⁄2 cup dried parsley flakes
- 2 tablespoons rubbed sage
- 1 tablespoon paprika
- 1 tablespoon seasoning salt
- 2 teaspoons garlic powder
- 1 teaspoon ground black pepper
- 3⁄4 teaspoon ground nutmeg
- 6 bay leaves
- 1 large onion, cut into wedges
- 32 ounces chicken broth
directions
- Pre-heat oven to 325°F.
- Remove giblets and neck from turkey and discard (unless you need them for something else).
- Rinse turkey and pat dry with paper towels.
- Place turkey on rack in roasting pan and brush with oil.
- Mix together the dried parsley, rubbed sage, seasoned salt, garlic powder, ground black pepper, and nutmeg.
- Place 1 T of seasoning mix, bay leaves, and onion wedges inside turkey.
- Pat remaining seasoning mix over entire surface and inside skin.
- Add chicken broth to roasting pan.
- Cover turkey loosely with foil tent (shiny side in).
- Roast one hour, then remove foil (reserve for later).
- Roast another two to two and a half hours, basting occasionally with pan juices. If skin begins to get too brown, replace foil loosely over bird.
- Let stand 20 minutes before carving.
