  1. Only change I made was to use some sauteed chopped red pepper rather than pimento. Good, but needed a little something, maybe some extra feta, definitely some salt. I used the skillet to heat the spinach which I think dried it out too much and would use the microwave next time. Overall, a nice healthy dish that's attractive and colorful, too. I'll definitely make it again, maybe even as a light lunch instead of a side dish. Thanks, Roosie, for sharing the recipe!
     
  2. I absolutely love spinach and this recipe does star this fave of mine with a rare co-star and the blend was very good. I used fresh spinach (blanched in boiling waterand refreshed in cold water)and then then sauteed it again in a skillet and added freshly boiled and drained chickpeas, green chillies chopped (dont know what pimientos are) and crumbled fresh cottage cheese (paneer) and it was marvelous. Made this on Tuesday but could not post the review as my net was down for 5 days due to heavy rain. Sorry and thank you for the lovely addition to my spinach artillery :D Fay
