For the cheese stuffing
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1⁄4 cup parmesan cheese
- 1 egg
- 1 lb frozen spinach, thawed and drained (6 minutes in microwave, then squoze in a kitchen towel)
- 1⁄8 teaspoon ground nutmeg

For the sauce
- 1 (6 ounce) can tomato paste
- 1 1⁄4 cups chicken broth
- 1 cup mushroom, sliced
- 1 teaspoon italian seasoning

- manicotti
- extra mozzarella cheese (optional)
directions
- Preheat oven to 350.
- Boil manicotti shells.
- Combine all cheese stuffing ingredients; stuff manicotti.
- Combine all sauce ingredients (or use a couple of cups of your favorite spaghetti sauce) and pour over stuffed manicottis.
- Cover with aluminum foil and bake for 30 minutes.
- Top with extra mozzerella, if desired, uncover and bake for 10 more minutes.
