Simple Veggie Burger

"After an unsuccessful search for the perfect (for me) chickpea burger recipe, I decided to concoct my own burger. This was thrown together with ingredients I had on hand, and the result was delicious and nutritious. I'm sure you could make substitutions to create your own perfect burger. Enjoy!"

  • Heat 2 tbsp oil in a nonstick skillet on medium-low.
  • Add spinach and saute, turning frequently, until wilted.
  • Put spinach onto a plate to cool.
  • Add chick peas, eggs, and seasonings to a food processor and pulse until combined.
  • Add cooled spinach and process until spinach is incorporated.
  • Pour mixture into a mixing bowl, then add carrot and wheat bran and stir to combine.
  • Shape mixture into 4 patties - they will be very mushy, but they will crisp up when cooking.
  • Heat 2 tbsp oil (or canola spray) on medium-high in a nonstick skillet.
  • Add patties and cook about 5 minutes per side.
  • Serve on a bun with a little ranch dressing, or however you like!
