Simply Blueberry & Lemon Muffins

MUFFINS
- 2 cups Bisquick (biscuit or baking mix)
- 1⁄2 cup sugar
- 1 egg
- 1 cup low-fat sour cream
- 1 cup fresh blueberries (can use frozen, see note in description)

TOPPING
- 3 teaspoons lemon peel, grated
- 2 tablespoons sugar
directions
- Preheat your oven to 400F.
- In a large bowl, combine the biscuit mix and 1/2 cup sugar.
- Whisk the egg and sour cream together and then stir it into the dry ingredients - just until moistened.
- Fold in the blueberries.
- Fill greased or paper lined muffin cups half full.
- Combine the topping ingredients (lemon peel & sugar) and sprinkle over the batter.
- Bake for 20-25 minutes.
- Cool 5 minutes before removing from pan to a wire rack.

Such a perfect, quick fix-up for blueberry muffins! These disappeared quickly. I'm just lucky I managed a shot before these great little muffins were no more.... <br/>I altered the recipe a bit. First of all. I only had about 3/4 cup sour cream. So I made up the difference with almond milk. No problem. Also doubled the blueberries, and added about 1/2 teaspoon of vanilla flavoring. Then, since I was out of lemons, I had to improvise: In a small bowl, I added about 1/4 c. quick oatmeal and maybe about 2 Tbs. brown sugar. Mixed until it was all distributed. Before popping muffins into the oven to bake, I sprinkled the oatmeal mixture evenly on top of each muffin. Result? Delicious and beautiful to behold. What a winning recipe. For the Bisquick I used Recipe#55564 (which I always keep on hand). I added about 2/3 teaspoon of lemon extract to the batter since I skipped the sugar topping for diabetic reasons. The muffins are really wonderful, they have a thin crisp outer crust and are heavenly light and fluffy. Not too sweet and they are pure pleasure :D.

Five stars for a very easy and quick muffin recipe! Love being able to use frozen blueberries too. These are very moist muffins that have the familiar "Bisquick" flavor. For us I think I would rather put the sugar and lemon peel in the muffin mix instead of topping with the sugar mixture. Thank you HokiesLady for posting your recipe. My muffins are not high cause I had only 1 1/2 cups of bisquick left. So I used 1/2 cup of flour but forgot to add something like baking powder or soda. I used frozen blueberries. They're moist and tasty. And I forgot to do the topping :( Sorry about that Melissa. Thanks for posting this recipe. Made for Newest Zaar tag.
