Simply Muffins

"This is just a very basic muffin but I just love the flavor of them. This is a recipe I got from cooking class in high school. Close to 40 years old...come to think of it..oh my."

  • Preheat oven to 400 and grease muffin tins.
  • In a large bowl sift the flour,baking powder and salt. Stir in sugar.
  • In another bowl beat the egg until foamy.
  • Add milk and melted butter to the egg mixture.
  • Pour the liquid ingredients into the dry ingredients and add raisins.
  • Stir with a fork just until the whole mixture is dampened. (the batter will look lumpy).
  • Spoon the batter into muffin tins 2/3 full.
  • Bake in oven 20-25 minutes. Remove muffins and cool on rack.

  1. Nice little muffin! I made these into mini-muffins, and used Splenda instead of sugar, and peanut butter/chocolate chips in place of raisins - personal preference. Very nice, light flavor, we really liked this! Thanks FrenchBunny I will make these again! Made for 2009 Spring PAC
