  • 1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
  • 6 large eggs, beaten
  • 1 12 cups heavy cream
  • 2 cups chopped fresh Baby Spinach, packed
  • 1 12 cups shredded swiss cheese

Directions

  1. Preheat the oven to 375 degrees F.
  2. Spread the Mashed potatoes evenly in a pie pan to make a "crust" of potatoes.
  3. Combine the eggs, cream,(salt and pepper-if considered free ingredients in the contest) in a blender.
  4. Layer the spinach and cheese in the bottom of the potato crust.
  5. Pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into wedges.
