  • 2 fennel bulbs, cleaned and quartered
  • 1 -2 tablespoon olive oil
  • kosher salt & freshly ground black pepper

Directions

  1. Preheat the oven to 350 degrees.
  2. Toss the fennel, olive oil, season with salt and pepper and pop into the oven, uncovered, in a small pan.
  3. Shake the pan every 15-20 minutes.
  4. Cook for 45 minutes, or until soft and starting to crisp on the edges.
