Ingredients Nutrition

  • 1 (20 ounce) package Simply Potatoes Red Potato Wedges
  • 1 lb turkey kielbasa, sliced into coins
  • 1 (12 ounce) packagefrozen sweet white corn (i.e. John Cope's)
  • 1 cup chopped sweet onion (i.e. Vidalia)
  • 3 tablespoons olive oil, divided (any kind)

Directions

  1. Heat a large non-stick skillet over low heat, add 1 T olive oil and the kielbasa.
  2. Increase heat to medium-low and cook , stirring and turning the meat until it's warmed through.
  3. Add remaining oil and the onions, increase heat to medium-high and continue to cook until onions have softened.
  4. Add the full bag of Simply Potatoes and the corn, cover and continue to cook, stirring occasionally, until until corn and potatoes are thoroughly hot, and the onions and potatoes have started to brown.
  5. Serve and enjoy!
