"Adapted from "Small-Batch Baking." Mine has less measuring and only needs 2 spoons and 1 bowl to make. Plus, it only makes two little cookies, not six! No leftovers to tempt me."

  • Preheat toaster oven to 350. Melt the margarine in a small bowl for about 20 seconds in the microwave. Add in the egg whites, oil and sugars. Mix well. Add in the flour and baking soda, mix to form batter. Add in chocolate chips or raisins. Spoon into two mounds on sprayed toaster oven baking sheet. Bake for ten minutes.

  1. Holy cow this was outstanding! Cookies are a big thing I miss from my lifestyle change of eating healthy but this was great! I used applesauce for the oil & margarine, Splendas for the sugars, oat flour & mini choc chips. Oh, and Eggbeaters (still used 2 tsp). Baked in around 8 min in my toaster oven. Fast, delicious, and as you said Ficbot, no leftover to tempt me!! Can't thank u enough for posting this.
