Sizzling Snapper Tacos With Peach Salsa

"Here's a fabulous Mexican-inspired entrée that pairs grilled snapper with a spicy peach salsa...and wraps it all up in a soft tortilla. Garnish with sliced avocado sliced red onion and chopped cilantro."

  • Sprinkle fish with barbecue seasoning. Drizzle with olive oil and lime juices. Set aside. 30-45 minutes.
  • Meanwhile combine all ingredients for salsa. Let sit for 30 minutes or longer, to allow flavors to mingle.
  • Preheat BBQ grill to high. Grill fish, about 3-4 minutes per side, until flaky. Remove to a platter and chop into bite-sized pieces.
  • To Assemble, combine mayonnaise and chipotle sauce. Spread each tortilla with 1 tablespoon of the mayonnaise mixture, followed by the fish, avocado slices and salsa. Top with additional onions, cilantro and fresh lime juice, if desired.

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
