Sizzling Snapper Tacos With Peach Salsa

FISH
- 1 lb boneless red snapper fillet
- 1 tablespoon barbecue seasoning
- 2 tablespoons olive oil
- 2 tablespoons lime juice

SALSA
- 2 cups europe's best sun ripe harvest peaches, chopped
- 2 tbps. cilantro, chopped
- 1⁄4 cup red onion, chopped
- 1 -2 jalapeno pepper, finely diced
- 1 tablespoon lime juice
- 1 tablespoon sugar

ASSEMBLY
- 4 medium flour tortillas
- 1⁄4 cup mayonnaise
- 1 tablespoon chipotle hot sauce
- 1 avocado, sliced

GARNISHES
- sliced red onion
- lime wedge
- chopped cilantro
directions
- Sprinkle fish with barbecue seasoning. Drizzle with olive oil and lime juices. Set aside. 30-45 minutes.
- Meanwhile combine all ingredients for salsa. Let sit for 30 minutes or longer, to allow flavors to mingle.
- Preheat BBQ grill to high. Grill fish, about 3-4 minutes per side, until flaky. Remove to a platter and chop into bite-sized pieces.
- To Assemble, combine mayonnaise and chipotle sauce. Spread each tortilla with 1 tablespoon of the mayonnaise mixture, followed by the fish, avocado slices and salsa. Top with additional onions, cilantro and fresh lime juice, if desired.
