Skillet Flatbread from King Arthur Flour

"Found this recipe on King Arthur Flour site and I've recently been enjoying flatreads and this one looks good. King Arthur describes it this way: "Using a basic ratio of five pantry staples, you can have fresh, hot bread on the table in less than 30 minutes AND no need to turn on the oven. Add and change ingredients to your taste, and you'll have an endless array of tasty flatbreads to accompany any meal.""

directions

  • Place the flour, baking powder, and salt in a large mixing bowl and stir to combine.
  • Add the oil and ice water, and mix to make a soft, cohesive dough. Adjust with flour or water as needed. The dough should be moist but not sticky. Cover with plastic wrap, and let rest for 10 minutes.
  • Preheat a heavy-bottomed skillet on the stovetop. Add 1 tablespoon oil and heat until the oil starts to shimmer in the pan.
  • Divide the dough into 10 to 12 equal pieces. Each piece should weigh about 1 1/2 to 2 ounces, about the size of a large egg. Dredge each piece in flour, and roll to a rough circle or oval, about 1/4" thick. OR hand shape the pieces by flattening between your palms.
  • In batches, fry the flatbreads in the hot oil for 2 to 3 minutes, or until golden brown. Flip and fry on the second side for another 2 minutes. Transfer from the pan to a rack to cool slightly before serving. Add more oil as needed for frying successive batches.
  • NOTES:

  • Rye variation: Replace 1 cup of the all-purpose flour with 1 cup Rye Flour and 2 teaspoons Deli Rye Flavor. All other ingredients remain the same. Serve with cream cheese, chives, tomato, thinly sliced onion and capers.
  • Pizza bread version: Add 2 teaspoons Pizza Dough Flavor and 2 teaspoons dried Italian herbs or Pizza Seasoning to the flour mixture. Serve with marinara sauce for dipping.

  1. Thanks for a fun and quick recipe!! This reminds me of so many different things. - Naan bread, which I am constantly buying at the grocery store, so thank you, I can make my own now! I also think it reminds me of Taco Bell's chalupa. They also taste like pancakes. So here are fun ideas to try (I tried the first 3): 1. sprinkle with garlic salt 2. melt butter on top 3. melt butter on top, sprinkle with garlic powder and parmesan cheese 4. make tacos with them 5. put powdered sugar on top (like a funnel cake!) 6. melt butter on top and then add cinnamon and sugar (like an elephant ear!) 7. melt butter on top and eat like a pancake, with real maple syrup 8. eat with honey. Enjoy! :)

  2. This was easy and delicious and enjoyed by all. I replaced a third of the unbleached flour with whole wheat flour. I tested my bread with butter and homemade marmalade and ~Tasty Dish~ liked her serving with honey! By far my favorite recipe I've tried for the Best of 2013 tag game!

  3. Fun, simple and quick recipe. It's like a flattened skillet biscuit. I think they would be delicious cooked in butter instead of oil. Thanks for posting the recipe.

  4. Bonnie, I can't tell you how much I enjoyed this tasty bread. It was quick and easy to make, is nicely flavored, crispy yet tender in the inside and just the right amount of chewy. My dh & I enjoyed this so much. Thanks for sharing this recipe.
