Skillet Gnocchi With Spinach & White Beans

"This is my version of a recipe I found on EatingWell and tweaked to our liking. We like ours very thick. See options for a slightly saucier version see *optional version* it adds a 1/2 cup of water and changes how the onion is cooked."

  • Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Add gnocchi and cook, stirring often, until plumped and starting to brown, 5 to 7 minutes. Transfer to a bowl and keep warm.
  • Add the remaining oil and onion the pan and cook over medium heat for about 7 to 10 minutes, till soft and lightly caramelized. Stir in garlic and cook 1 to 2 minutes.
  • Add the spinach, tomatoes, beans, pepper to the onions and garlic and cook for 1 to 2 minutes. Stir in gnocchi and sprinkle with mozzarella and Parmesan. Cover just till cheese melts about 1 minute.
  • *optional version* Add reaming oil and onion to the pan and cook, stirring, over medium heat for 2 minutes. Stir in garlic and 1/2 cup water. Cover and cook until the onion is soft about 4 minutes.

  1. We enjoyed this hearty all-in-one dish. Great combination of ingredients -- next time, I might cut the spinach by half and add some red pepper flakes to give it a little "kick". I will definitely make this dish again. Thanks for the post! Made for the Everyday is a Holiday tag game.
     
  2. What a wonderful and healthy one-pan dish! I used less onion and fresh spinach, otherwise made just as directed. I didn't drain my tomatoes and thought that the amount of liquid was just right to make a nice sauce for the gnocchi. Loved this dish - thanks for sharing the recipe!
     
  3. We found this a too heavy on the beans and light on the tomato for our taste. Loved the preparation of the gnocchi though. I've never sauteed them before.
     
  4. Mmm Deb, loved this!!!! I would never have thought of adding white beans (I used cannelli), but it really works! I like the addition of red pepper flakes by other reviewers, but the gnocchi I used were tomato/chilli flavour and really didnt need an extra kick. I didnt hold back on any ingredients, I like a saucy dish. I didnt add the mozzarella, not for any particular reason other than that I thought the grated parmesan was sufficient. Loved this tasty recipe, am having the leftovers for lunch, so fab! :) Made for International Agents of QUEST, Italian trip :)
     
  5. Excellent dish!! I used potato gnocchi and left out the mozzarella (didn't have any). I also added red pepper flakes as Nancy's Pantry suggested. Hubby and I loved it. Will make this one often. Made for Everyday is a Holiday game 2013.
