directions

  • Pour the tomatoes with their juice into a quart measuring cup. Add enough water to the tomatoes to measure 4 cups.
  • Heat the oil in a 12-inch nonstick skillet over medium heat until shimmering. Add the onion and 1/2 teaspoon salt and cook until softened, about 5 minutes.
  • Stir in the garlic and red pepper flakes and cook until fragrant, about 15 seconds. Add the meatloaf mix and cook, breaking up the meat into small pieces with a wooden spoon, until no longer pink, about 5 minutes.
  • Sprinkle the noodle pieces evenly over the meat. Pour the diced tomatoes and tomato sauce over the pasta. Cover and bring to a simmer. Reduce the heat to medium-low and continue to simmer, stirring occasionally, until the pasta is tender, about 20 minutes. (The sauce should look watery after 15 minutes of cooking. If dry, add up to 1/4 cup additional water to loosen the sauce.).
  • Remove the skillet from the heat and stir in 1/2 cup Parmesan. Season with salt and pepper to taste. Dot heaping tablespoons of the ricotta over the noodles. Cover the skillet and let stand off the heat for 5 minutes.
  • Sprinkle with the basil and serve, passing the extra Parmesan separately.

Questions & Replies

  1. Did you drain the grease from the meat? I may have missed it somewhere.

  2. Did you use a cast iron skillet? The picture appears to be a C.I. Please let me know plan to make this Saturday 3/10/18

  3. So this is not really a traditional multi layered lasagna ? Maybe it should be called something else. Faux Lasagna ? Pseudo Lasagna ? Lazy Lasagna ?

  5. what do I do if I slighty scorched my tomatos

Reviews

  1. I make a pan lasagna all the time - one of my favorites and very easy to make. Here is a great substitution tip for you - use Bow Tie - Farfalle pasta. No need to break up any lasagna noodles. Also, if I already have it in the house, I will use cottage cheese, or a combination with ricotta. Oh, and if you want to spice it up a bit, instead of ground pork, substitute with a flavored (spicy?) pork sausage instead. PS. a slightly lighter version can be made using ground turkey and cottage cheese as replacements for the meat and ricotta.

  2. I followed the recipe mostly, and I'll be honest. It turned out better than the baked lasagna I made at Christmas. I will make it again.

  3. Not one of our faves. Think the spaghetti sauce sounds like a better flavor. Liked the idea of doing in a skill.

  4. I made this recipe last night in my Ninja multicooker and it was delicious. My family loved it. I followed the recipe, however, I used ground turkey and Italian turkey sausage instead of the meatloaf mix. I also added some bell pepper, a small can of mushrooms and Italian seasoning to it. I cooked it on bake at 300 for about 30 minutes. I added extra water to it so that it wouldn't dry out. At the end I added freshly grated Parmesan and mozzarella and mixed them in. . . added the basil as well.I also mixed in a little bit of the ricotta before I added extra dollops on top. I definitely think this turned out better than the well known name brand found at the store. Will definitely be making this again.

  5. Probably won't make again. Way too bland for my taste. Followed the recipe, but added more red pepper. As I said, too bland.

Tweaks

  1. I used Rasbrytea and paygep tweaks. I too used half sausage and half ground beef. Cut sausage into thin pieces and while cooking break it into smaller pieces. Used spaghetti sauce and water only Used oven ready lasagna curly edge noodles, so I didn't have to precook them for this recipe. Added Mozzarella and five Italian cheese as well as Parmesan.

  2. I subbed tomato sauce with pasta sauce from a jar, added mozzarella, and I boiled my noodles first. I didn't want to take a chance of it turning out dry.

My husband and I live just west or Toronto, with our 2 cats. I love to cook but hate spending hours with prep work or cleaning up. I have recently taken up knitting and fancy scarves are my signature. We are hoping to add to our family soon, may 2007 bring me the pitter-patter of little feet!
