Skillet Lasagna

  • In a large skillet on medium high heat, add olive oil. Saute garlic and onion for 2 minutes. Add ground beef, cook until brown. Drain off any access grease from beef.
  • Add tomatoes, water, tomato sauce, parsley, basil, oregano, pepper (1/2 teaspoon) and salt. Stir in uncooked pasta.
  • Bring to a boil, stirring occasionally. Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
  • Combine cottage, pepper (1/8 teaspoon) and Parmesan cheeses. Mix in the egg. Drop cheese mixture by rounded tablespoons onto pasta mixture.
  • Cover and cook for 5 minutes more.
  • Sprinkle mozzarella cheese on top and serve.

  1. Love this alternative to all the other skillet lasagnas that use jarred sauce. I used fire-roasted diced tomatoes but otherwise followed recipe exactly. Hubby gave it 5 stars...we will definitely be having this again. Thanks!
     
  2. Very Good! I changed the recipe to match some of the ingredients I had on hand (i.e. Penne pasta instead of Rigatoni; no cottage cheese & didn't try to substitute). Also, I improvised a bit on some of the amounts. I added more garlic. It was a great meal, very simple, & I'll make it again. Thanks so much for posting the recipe.
