Skinny Black Bean Dip

"I love the challenge of slimming down fattening foods. I have to admit, I LOVE my butter, cream, and other fats...so its tough for me to get recipe to taste EXACTLY as good as the original...but its fun to try to get them close. Better yet, I feel great after eating them - refreshing. This one is my take on Black Bean Dip, I hope you like it as much as I do."

  • Place all ingredients in a blender or mini food processor. Blend until smooth. Season to your taste.
  • The Chipotle Peppers & Adobo sauce add a nice smoky flavor with a little bit of heat. Add more if you prefer additional heat.
  • Serve with fresh cut cucumbers, bell pepper strips, carrots, celery, broccoli, etc.
  • You could also spread this on a whole wheat tortilla, add vegetables and make a sandwich wrap.
