  • Juice 3 grapefruit to make 1 3/4 cups juice.
  • Set aside.
  • With spoon, scrape membrane out of shells; reserve shells.
  • Peel and remove sections from remaining grapefruit.
  • Reserve from garnish.
  • In small saucepan, soften gelatin in cold water; then dissolve over low heat.
  • Set aside.
  • Mix cheese, sugar and grapefruit juice until smooth.
  • On low, add dissolved gelatin and mix well.
  • Pour mixture into reserved grapefruit shells.
  • Chill until firm.
  • Before serving, garnish with reserved grapefruit sections.
