Skinny Chick Popsicles

"I like this recipe because it is light, refreshing and tasty! My mum made it when I was little and she invented the recipe. I altered it a bit to fit, me being anorexic and all. Hope you enjoy!"

  • Puree the fruit.
  • Whip up you cream (add honey or Splenda if you please).
  • Mix the strawberries and whipped cream.
  • Fill the mixture into Dixie cups.
  • Insert popsicle sticks.
  • Freeze overnight.
  • When ready, pull our of cup and drizzle with low fat chocolate (if you desire.
  • ENJOY!

  1. I just made these tonight, and I can not wait to try them tomorrow. I tasted the mixture before I froze it, and it seems like it will be delicious...And I hope that you are able to get some help with your anorexia very soon and that you recover!!
     
  2. Hi Lenka, I didn't actually try your recipe, but am responding to your posting. I am 21 years old and have been fighting anorexia/bulimia for over 10 years now. I also started at age 11. I know that cooking can easily become an obsession when you have an eating disorder. Please find someone you can trust to talk to.   3. so yummy. i did tweak this just a bit. I used 2 lbs. of strawberries i had left over with 3 cups of cool whip light, then added 1/4 cup of splenda to make it sweet enough for my liking, then used my popsicle molds. Made for PAC Spring 2009
     
  4. hi, I read your page and just wanted to ask how you are and wish you well in your recovery. I'm 16 and have had an eating disorder since i was 12 but am managing to keep my weight stable. hi!I am Lenka, and i am anorexic, but i still love to cook. i cook in my own way. and first off, try to understand that anorexics DO eat! we just don't eat very much. all of the recipes that I've put up are what i like to call "safe foods". "Safe foods" don't contain that many calories or much fat. i have joined this site because i want to share my stories, and my recipes. i first became anorexic at age 11, and i recovered at 13, i recently relapsed ( i am not 16), but am recovering well. i am trying to spread awareness, because anorexia is a disease, not a fashion statement. please don't post hateful comments, i give myself enough hate. but do post comments, i love to hear from you!!! ♥♥☺☺
