Sky's the Limit Pasta

"This is a quick pasta I came up with, with ingredients I had on hand and my Husband loved, loved loved it. The bacon and the toasted coconut gives this dish an extra dimension. I served it with baked (bone in) chicken breasts but you could serve this dish with anything or on it's own."

  • Cook pasta according to package.
  • Meanwhile add butter and chicken stock to pan.
  • Saute tomatoes, capers, garlic, green onions and red pepper flakes till cooked and thickened a bit.
  • Add this mixture to pasta along with fresh lemon juice, fresh basil, nuts, cooked bacon, toasted coconut and freshly grated Parmesan cheese.
  • Enjoy!
