Slap Me Silly Grilled Chicken

"I created this marinade/rub for chicken on a whim and boy was it a HIT! We didn't have a big enough grill for chicken in a beer can, but this recipe knocked off everyone's socks. Give it a try tonight."

  • Combine all ingredients (except chicken) in a bowl.
  • Pour or rub mixture over chicken.
  • Allow to rest in a dish large enough to hold the chicken, covered, in refrigerator for at least 3 hours.
  • Grill the chicken breast-side-down on the unheated side of the grill.
  • Cook, covered, for about 30 minutes.
  • Turn it breast-side-up and continue grilling until the skin in golden brown and the meat is cooked through, about 30 more minutes.
  • Remove from grill and let stand, covered loosely with foil, for about 10 minutes before serving.

  1. What a great marinade! Next time, I will marinade it much longer and put some of the marinade under the skin. I grilled a whole chicken using the tips from recipe #382457. Thanks for sharing this recipe!

I have a quick disclaimer...I hate it when people don't follow a recipe and then feel like they need to review it BUT I really wantd to try this and it is too cold to grill here in the great NY state so I put the chicken in the marinade and then cooked it in the crockpot instead. IT IS DELICIOUS..very tender (I used chicken breasts because that's what was on sale) and so yummy. I will try it again as soon as it warms up to use my grill...I'd love to try it as it was intended.

I teach at both a high school and college several miles away from home. Cooking during the week is sometimes difficult to do so I'm always looking for easy recipes I can incorporate into a busy week. On weekends, you'll usually find me cooking up a storm for occassional leftovers for the week or to entertain guests. My favorite tool to cook with... the grill.
