  1. Fry the onion garlic and ginger in low fat cooking spray until soft, add the cumin, paprika, chilli powder and cook for 1 minute .
  2. Add the Quorn or chicken and cook for 5 minutes. Tip in tomatoes, the butternut squash, dates and the vegetable stock, tuck in the cinnamon stick and simmer for 1 hour. Stir through coriander before serving.
