Sloppy Joe Potatoes

"If you are looking for a different way to serve potatoes, these are really good. Prep time includes baking the potatoes and frying ground beef."

  • Bake potatoes for approximately 1 hour, or until done.
  • In a frypan, brown ground beef and garlic; drain any fat.
  • Add in ALL remaining ingredients (except cheese) stir and simmer for 10-15 minutes.
  • Cut potatoes in half lenthwise.
  • Loosen potato pulp and generously spoon meat mixture over each potato half.
  • Sprinkle with cheese.
  • Place under broiler to melt the cheese for a couple of minutes (it is not really necessary to melt the cheese, but I prefer to have my cheese melted).

  1. Freakin awesome. Nuff said. I made a 'i'm broke' variation of these and subbed a can of chili for the ground beef and it came out amazing.
     
  2. Not bad - I loved the sweetness the sweetcorn gave it - but just not enough kick to it. And needed a lot of salt and pepper. Little tip for when you're baking the potatoes, though. Set the oven to 190(celsius), brush your potatoes with a little olive oil and then sprinkle with salt. When you bake them (about 1hr 20mins) the skin will crisp up really nicely and give them a lovely salty zing. Just right!
