Slovak Cucumbers in Sour Cream

  • Combine the cucumbers, garlic and salt in a colander.
  • THIS IS IMPORTANT: Place the colander in the sink and let stand for 1/2 hour.
  • Squeeze out as much water as you can with your hands.
  • Then place in a bowl and add the sour cream, vinegar.
  • (You may also add thinly sliced onions at this point).
  • Mix well and sprinkle with paprika for color.

  4. This was so good, and so very easy too. I never thought of squeezing water out of cucumbers, I will try this in a couple other of my cuke dishes as well. This is very much a throw together dish, but no one would know from the results. We have lots of fresh cucumbers right now, and this was a refreshing change from the usual recipes I use. Definatley a keeper! Thanks for a great new summer recipe!
     
  5. I grew up on that stuff, so I know a good cucumber salad (mizeria is what we call it) when I see or taste one. The addition of the garlic is what makes it stand out. Thank you.

We usually alternate between Florida Keys and Arizona for the winters. The rest of the year, you can find us just about any place. We love our home on the lake, but there is a bit of gypsy in us both and we hit the road as much as we possibly can. I subscribe to Taste of Home and own EVERY Southern Living Annual since 1979. I guess my biggest pet peeve is people who are negative all the time. Because I enjoy life so much, I try to avoid such people. Life is too short.
