Slow Cook Chili

"This is my husbands receipe for chili. And I thought I'd share it with you."

  • In a large skillet, fry bacon until crisp.
  • Remove from pan and set aside until serving time, reserve pan and drippings for the hamburger meat.
  • To the crock pot, add the El paso, chili beans, beef broth, chili powder and cayenne pepper.
  • Stir to blend.
  • Using the same skillet, brown hamburger meat.
  • Add salt and pepper to taste.
  • Add meat to crockpot and stir mixture.
  • Simmer for at least 4-5 hours.
  • Stir frequently.
  • Crumble bacon and sprinkle over each serving of chili.
  • (optional: sprinkle shredded cheddar cheese over each serving along with the bacon).

October 16th, 2008: Colleen passed away from cancer, after a 3 year long battle, on April 3, 2008. She was a fighter and did so until the end. She loved to cook and enjoyed Recipezaar. She has left behind a husband, who has always enjoyed helping out in the kitchen. She is survived by her daughter Steph, son in law Chris, a 3 y/o granddaughter Olivia, who she adored. Steph is pregnant with Colleen's 2nd grandchild, a girl, who is due in Feburary, which was a miracle suprise to her parents and most likely, a gift from Colleen.
