- 1 lb beef, stew meat
- 2 potatoes, peeled and cubed
- 2 cups beef broth
- 1 1⁄2 cups vegetable juice, V8 is best
- 2 stalks celery, diced
- 2 carrots, diced
- 1 sweet onion, diced
- 3 bay leaves
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon dried thyme
- 1⁄2 teaspoon chili powder
- 1⁄4 teaspoon pepper
- 2 tablespoons cornstarch
- 1 tablespoon cold water
- 1 cup frozen peas
directions
- Combine first 12 ingredients in a slow cooker. Cover and cook on low until meat is tender, about 7 hours.
- Add frozen peas. Combine cornstarch and water until smooth. Stir into stew. Cover and cook on high until thickened, about 30 minutes. Discard bay leaves and serve.
