- 1 lb well trimmed pork tenderloin, cut into 1-inch pieces
- 1 (16 ounce) jar thick & chunky salsa
- 3 (15 ounce) cans black beans, rinsed and drained
- 1⁄2 cup fat free chicken broth
- 1 medium red bell pepper, chopped
- 1 medium onion, chopped
- 1 teaspoon cumin
- 2 teaspoons chili powder
- 1 teaspoon dried oregano
- 1⁄4 cup fat free sour cream
directions
- In a slow cooker, combine pork, salsa, beans, broth, bell pepper, onion cumin, chili powder and oregano. Mix well and cover; cook on low 8 hours or until pork is tender. Garnish with sour cream.

I love to cook and bake. Unfortunately, I have a picky husband who is pretty much a meat and potatoes kind of guy. However, my family, friends and relatives always asked me to make their favorite dishes of mine or bring something new that catches my eye.
I have an extensive collection of cookbooks and love those which have pictures. I especially love those that are assembled by groups or organizations, since normally they represent the best of the best from that particular person. Why would anyone list something that wasn't their favorite?
