- 4 boneless skinless chicken breast halves
- 2 medium potatoes
- 1 cup sliced baby carrots
- 1 (10 3/4 ounce) can condensed cream of chicken soup
- 1⁄2 cup water
- 1⁄2 teaspoon crushed thyme leaves
- 1⁄8 teaspoon black pepper
- 1 cup baking mix
- 1⁄3 cup milk
directions
- Cut Chicken and Potatoes into 1in pieces.
- Place Chicken, Potatoes, and Carrots in at least a 4qt slow cooker.
- Mix the soup, water, thyme leaves, and black pepper together in a small bowl. Pour the soup mix over the chicken and veggies.
- Cover and cook on Low for 5-6 hours or until the chicken is cooked throughly.
- Mix together the all purpose baking mix and the milk.
- Drop the batter onto the soup by the spoonful.
- Replace the cover and tilt to vent, cook on High for 30 minutes or until dumplings are cooked throughly.

Thanks to 'Learnin' for this one. I looked for a slow cooker recipe with dumplings. The family thought it was great, i found it a little bland. I'll experiment with additional spices next time. We don't have baking mix so I used the recommended 'zaar' baking mix -- it needed more than 1/2C of milk to get a batter. The dumplings were really good. Yes, we will make it again.

This was pretty tasty. I cut the chicken breasts into chunks and also added in some frozen peas for the last hour or so of cooking. I did need to add in some flour mixed with a bit of water to thicken the gravy as it was somewhat thin. Next time I will make 1 1/2 or even 2 times as many dumplings as the 1 cup of baking mix doesn't make very many. All in all, a good easy go-to recipe though.
