Slow Cooker Chili Cook-Off Chili

  • Pan fry bacon (not too crispy!).
  • Lay bacon out on paper towels to absorb fat.
  • Cook ground turkey in bacon fat until no longer pink
  • Remove cooked turkey from pan with slotted spoon and put in slow cooker.
  • Cut bacon into 1" sections and add to turkey in slow cooker.
  • Add onion, garlic, chipotle pepper and adobo sauce to bacon and turkey fat and cook until onion is almost transparent (still has some crunch).
  • Add onion mixture to slow cooker and mix.
  • Add beans to slow cooker and mix.
  • Cook chili for 4 hours on high or 7 hours on low.
  • 1 hour before finished add corn, Worcestershire sauce, brown sugar and spices to chili.
  • Serve warm with your favorite cornbread!
