- 4 cups low sodium chicken broth
- 2 cups water
- 1 small onion, chopped
- 2 carrots, chopped
- 1 stalk celery, chopped
- 2 tablespoons garlic, minced
- 1⁄2 teaspoon dried thyme
- 1⁄2 cup dry lentils
- 1⁄2 cup brown rice
directions
- Place all ingredients in a small slow cooker. Cover and cook on low for 7 to 8 hours or until lentils and rice are cooked.

I made this for my DH and DD...as I didn't eat it (not well). So this review is from them. I didn't have any chicken broth...but used organic veggie broth. The smell of it cooking was marvelous! And they said it was wonderful....just needed a wee bit of kick to it. Which they added to there own bowls. I will be making this again during this winter. Thank you so much for sharing your recipe.
