Slow Cooker Southwest Chicken Stew

"This is a hearty, easy and very filling meal that my family loves. It can be adjusted for a thicker stew that my husband likes served over rice, or chicken broth can be added for more of a soup."

  1. Easy, Easy, Easy!!! And soooooo DELICIOUS! This is going in the "make repeatedly" cookbook!

  2. I omitted the kidney beans, used canned corn, and used two cans of tomatoes and a small can of chopped green chilies. It was WONDERFUL! I didn't need the broth and ... err... my crock-pot bubbled over a bit as it was. :) Ooops. It was totally worth the clean-up, though - VERY tasty! I"ll make this again for sure!

  3. I made this for my cooking club meetup. All of the ladies really enjoyed this recipe. It was a very flavorful recipe. I appreciate you sharing it.

  5. This was a great recipe that tasted really great. I had to use mixed vegetables instead of corn to lower the carb count, but really wanted more corn. it passed the ultimate test though, my super picky 4 year old ate it and wanted seconds and then even claimed the left-overs. That's a first
