Slow Cooker Winter Beef Stew

"This Beef Stew has a wonderful herb taste to it. It orginally came from Taste of Home Light and Tasty Magazine Dec/Jan '05. The only change I made was add quick cooking Tabioca to the broth to thicken it and cook it in the crockpot. In my house, I am considered the Crockpot Queen. LOL"

  • Lightly brown beef cubes.
  • If you don't have time, you can skip this step.
  • Place beef cubes in bottom of slow cooker.
  • Place chopped onion and minced garlic cloves on top of beef.
  • Layer the potatoes,carrots and cooked bacon.
  • In a medium mixing bowl, combine the broth, apple juice, tomato paste, quick cooking tapioca, parsley, bay leaves, salt, thyme,and pepper.
  • Pour over meat.
  • Cover and cook on low for 8- 9 hours or on high 4-5; until vegetables are tender.
  • Remove bay leaf before serving.
  • Enjoy!

  1. I am sure that this recipe is great as it is, but; I made a couple of changes. I substituted pinot noir wine for the apple juice and I used a 14 oz can stewed tomatoes, drained for the tomato paste. Magnifico! My husband said it was my best beef stew ever!
     
  2. Delicious stew!! It reminded me of a fancy coq au vin. I baked the meat separately (using Recipe #11857) and baked the stew at 325 for about 3 hours. The gravy is truly deluctable! Thanks Audrey, for posting. Roxygirl
     
  3. We all found this to be very, very bland. Looking at the recipe, we were all excited. It seemed like a great blend of ingredients. We all took a bit and looked at each other wondering where the taste was. Even adding salt and pepper did not help that much. Just really bland.
     
  4. This stew has a wonderful pot roast flavor, like my mom used to make. It was very easy to put together--I used only 1 tablespoon quick-cooking tapioca. My daughter loved the broth, but next time I'll put in probably 3 tablespoons to thicken it. I was out of tomato paste, so I used 1/4 cup ketchup. That worked just fine. I put in a little extra meat, and I was glad I did, since it tasted so good. Thank you, Audrey, for sharing your great-tasting stew recipe!

I am a mother of three and live in central Pennsylvania. My children were very active in after school activities and found we weren't spending anytime together at meal time. In 1998, I decided to start cooking my dinners in a crockpot so that we could have a home cooked meal together once everyone came home. My children now get so excited to see what we are having to eat and love the smell when they walk in the door. My family calls me the crock pot queen. LOL I use my crock pot everyday of the year. <br> <br>My three children are now in college and before they come home they request their favorite meal. I still continue to cook in the crock pot for my husband and I. It is nice after a long day to know your meal is ready. It also helps in keeping my grocery bill down. With zaar, I can print my shopping list and that is all I purchase is the ingredients on that list. <br> <br>Now, my two daughters have been crock pot cooking while in college. They find it is easy to cook for the themselves and their friends. It is an easy way to have friends over for dinner after classes <br> <br>I still love trying new recipes and purchasing cookbooks, especially crock pot cookbooks. <br> <br>Happy Cooking!
