  • Roll out sausage to form a rectangle about 3/8 inch thick.
  • Spread the cheese over the sausage leaving a 1 inch border to prevent leakage while cooking.
  • Roll the sausage back into a log shape, sealing the seams and edges so as not to have cheese escape.
  • Place on a smoker or on a grill with indirect heat at 225F to 250F.
  • Cook until internal temperature is 165F to 170F.
  • Let cool to room temperature, slice and serve with crackers.

Love to cook, camp, hunt, flyfish and tie flys. Am married for 34 years to a great cook(just look at my waistline). I am an anti- vegan(not really I just dont understand the attraction),I do eat my veggies but I am a meat lover. I have 3 children all grown and have 6 Grandchildren . I am a vietnam era vet(stationed in Germany),served in the Army 1972-1975 and Georgia Army National Guard from 1975-1987. I am in the HR Department here at work, in charge of Payroll, thus the handle. I love to grill and smoke food outdoors. I cook some inside but mostly outside. My favorite cookbook so far is the Weber Cookbook. My pet Peeves are Liberals. Much like Vegans,I just don't understand them.Hope I can contribute something useful to this good site. Y'all have already contributed to me.Thanks
