  • 1 small red onion, sliced
  • 1 tablespoon olive oil
  • 3 large red peppers (or 400g jar of smoked peppers)
  • 200 g soft feta cheese
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon fresh thyme, leafs

Directions

  1. Place the whole peppers directly over a gas burner. When charred through, place in a plastic bag so that it would steam and the charred bits will wipe off.
  2. Saute the onion in the olive oil until very soft and light golden in colour.
  3. Rub the skins off the peppers, discard seeds and chop. Place in a blender and blend all the ingredients until smooth.
  4. Serve with toasted crusty bread or toasted pita bread slices.
