Smoked Salmon and Blueberry Kahlua Salad

- 4 cups Baby Spinach
- 12 ounces smoked salmon
- 1⁄4 cup red onion, sliced
- 4 ounces goat cheese, crumbled
- 4 ounces walnuts, coarsely chopped

DRESSING
- 1 cup blueberries (wild or cultivated)
- 1⁄2 cup white sugar
- 2 ounces van dyke's blueberry juice
- 2 ounces Kahlua
directions
- Combine all the dressing ingredients in a medium saucepan, mash with a fork and bring to a boil, reduce heat to medium-low and simmer for five minutes. Remove from heat and purée until dressing has a smooth consistency, then cool.
- To assemble the salads, divide the spinach between 4 salad plates. Place 3 oz. of smoked salmon on top of spinach. Top each salad with 1 oz of crumbled goat cheese. top each salad with an equal amount of the red onion and walnuts. Drizzle each salad with the cooled blueberry dressing. ENJOY!

<br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
