Directions

  1. Combine all the dressing ingredients in a medium saucepan, mash with a fork and bring to a boil, reduce heat to medium-low and simmer for five minutes. Remove from heat and purée until dressing has a smooth consistency, then cool.
  2. To assemble the salads, divide the spinach between 4 salad plates. Place 3 oz. of smoked salmon on top of spinach. Top each salad with 1 oz of crumbled goat cheese. top each salad with an equal amount of the red onion and walnuts. Drizzle each salad with the cooled blueberry dressing. ENJOY!
