“Aussies love Seafood and I am no exception! This Pasta sauce takes less than 10 minutes to make (so start cooking your pasta before you start this) and dinner will be ready in quick as a flash. Recipe can be doubled and tripled for a crowd but does NOT freeze well. Prepare as close to serving time as possible.”

  1. Place the Prosciutto on an baking tray and grill both sides for 3 minutes, until crispy. Break into shards using your hands - set aside.
  2. Meanwhile, heat the oil, fry the onion until wilted. Add the garlic and fry until fragrant (about 30-60 seconds).
  3. Add the peas cream and lemon (juice and rind). Stir until it JUST comes to the boil and remove from the heat.
  4. Add in the salmon, mint and parmesan cheese.
  5. Top with the prosciutto.
  6. Toss through your pasta and serve.
  7. I grind fresh pepper as I am tossing the pasta through.
