Directions

  1. Combine cheese, chicken and cilantro in a large bowl.
  2. Arrange tortillas on a work surface and place about 1 cup filling on one half of each tortilla.
  3. Fold over and press together.
  4. Grill tortillas on a barbecue or in a grill pan for a few minutes on each side until browned and cheese is melted.
  5. Cut each into 4 wedges.
  6. For the guacamole, combine lime juice with salt, chiles and cilantro.
  7. Just before serving, mash in the avocado.
  8. Season to taste.
  9. Serve guacamole with quesadillas as a dip.
